How to cook country ham slices in skillet

Pre heat oven to 325 degrees. Remove skin and bone from the ham slices. Place ham in a 15x18x2 inch roasting pan or Pyrex dish. Put as many layers of ham as you would like. Cover bottom of pan with water, approximately 1/2 to 3/4 cup. Cover with aluminum foil. Cook approximately 1 hour or until brown on both sides and tender to a fork.

Every "old time" Southern cook has their version of this one. This is how my Mom taught me to prepare this breakfast treat. To this day, if the country ham has been cured properly for at least a year, I would rather have it on my plate than any other meat (including steak). We always had a country ham breakfast on Christmas morning!

    coffee, brewed

    FRYING THE HAM Trim off fat from country ham slices and render in hot skillet. When fat is crisp, remove the pieces and discard leaving the liquid in the skillet.

    With medium heat, lightly brown each side of the country ham, 3-4 minutes per side. Do not overcook as the ham will become tough. Note: If the ham is too salty for your tastes, pour a cup of water in the skillet as you fry it and it will draw some of the saltiness out.

    Remove skin from cooked ham.  Score fat with sharp knife, stud with cloves, place in baking pan.  Crush cranberry sauce with a fork, combine with brown sugar.  Spread one-half of mixture over ham.  Bake at 350 degrees, basting with some of remaining mixture.  Heat remaining mixture and serve as sauce over cooked ham.

    Rinse the country ham to remove some of the salty taste. Dry well, cook with a little butter in a medium temp frying pan over medium heat for 2 minutes son one side and 2 minutes on the other side.

    • .25 lb Country ham slices

    Instructions

    • Unwrap the country ham and separate the slices.

    • Soak the slices in a bowl ¾ full of warm water for 30 minutes.

    • Remove the slices from the water and dry well.

    • Heat a skillet over medium heat until the skillet is hot.

    • Add ½ tsp of butter to the pan and immediately place the slice of country ham down on the butter. Use your spatula to hold the slice so that it doesn’t curl up. Heat slice for to 2 minutes on side one.

    • Turn the country ham and repeat for 45 seconds - 2 minutes on side two.
