Best Baby Back Ribs

I believe grilling with family and friends is one of life’s simple pleasures – I love easy recipes on the grill when entertaining! BBQ baby back ribs are one of my absolute favorite grilling recipes.

My family makes this recipe at least once a month – and I am talking year-round. After all, that’s one of the perks of living in Florida: It’s always grilling season!

And let me tell you, that’s my favorite part about living in Florida. It’s easy to feel like a superstar behind the grill. There is nothing like the feeling of grilling up a dish that has everyone saying WOW!

Baby Back Ribs on the Grill

My secret to getting everyone excited about what I’m cooking starts with the ingredients – which means picking the perfect fresh pork ribs! 

Pork ribs on the grill smell so incredible your neighbors will come knocking at your door hoping for a dinner invitation. Pick them up at your local Walmart and GRILL ON!

  • Baby Back Ribs
  • Rib dry rub (your choice; or, use our dry rub for ribs)
  • Barbecue sauce (use your favorite)
  • Garlic powder

How to Cook Baby Back Ribs

  1. On a large rimmed baking sheet, rub each rack of ribs all over with the rib dry rub and refrigerate overnight. Make sure to cover the entire racks well and pat down the rub. It’s called a rub for a reason…. rub rub rub and pat pat pat on both sides, you want a really nice coating!
  2. Bring the ribs to room temperature when ready to cook. Clean the grill grates. You want nice clean grill grates for these baby back ribs. Light gas grill to medium, approximately 300°F.
  3. When grill is warm, place the ribs on the grill grates and close the lid. I like to check on these ribs every 20 minutes or so. I move them around a bit if I feel they are cooking unevenly. Grill for approximately 1 hour.
  4. Mix the BBQ sauce and garlic powder. At the 1 hours mark, brush the ribs with the BBQ Sauce using a basting brush. Give them a good coating.
  5. Turn the heat to low and shut the grill for approximately 15 minutes. Only baste with BBQ sauce in the last 15 to 20 minutes of grilling or the sugars will burn.
  6. Remove from grill and transfer to a large cutting board. Let the ribs rest for 10 minutes. Using a sharp knife, cut each rib in between each bone. Serve with additional BBQ sauce on the side.

    When making pork ribs, I would normally wrap them in foil and cook them low and slow in the oven, and then finish them on the grill.  Since I’ve been avoiding my oven, I thought it would be fun to see if I could cook pork ribs 100% on the grill.  Spoiler alert:  It works (and it’s delicious)!

    How to cook pork ribs on the grill?

    You start by rubbing racks of pork baby back ribs with an aromatic mix of paprika, chile powder, cumin, coriander, cayenne, salt, pepper and brown sugar.  The ribs are then wrapped in foil and cooked covered on the grill over direct medium heat for 1 hour.  I personally prefer using a charcoal grill, but you could easily make these on a gas grill.  The key is to maintain a temperature of 350°F – 400°F within the covered grill.

    The ribs are then unwrapped and finished on the grill with the addition of hickory wood chips (optional) and store bought barbecue sauce.  You baste and turn the ribs a few times over 10 – 12 minutes, resulting in saucy, smoky, charred ribs.  So.  Yum.

    How long do you cook pork ribs on the grill?

    Normally I would recommend using an instant read thermometer to gauge the doneness of meat on the grill; however, that method can be a little tricky with this method.  It’s recommended that pork is done around 145°F, but you need to cook pork ribs to around 190°F to 200°F to really break down fat and collagen, resulting in a tender finished texture.  Also, given that the ribs are wrapped in foil, it’s hard to figure out where to put the thermometer without unwrapping the ribs.

    I’ve tested this recipe several times and have found that 1 hour over direct medium heat (charcoal or gas) will give you tender ribs that don’t fall off the bone (that’s a good thing!).  Just make sure you’re maintaining 350°F – 400°F within the covered grill, and the ribs will turn out great every time.

    In this recipe, the ribs go back on the grill uncovered for 10 to 12 minutes longer to allow them to soak up hickory smoke and a barbecue sauce baste.  You’re not really cooking the ribs during this phase – just infusing them with flavor.

    What’s the difference between spare ribs and baby back ribs?

    Spareribs come from the belly of the pig while baby back ribs come from the loin region.  Baby back ribs are shorter than spareribs, and have areas of leaner meat. I am using baby back ribs for this recipe, because they cook faster than spareribs.

    Pork Dry Rub Recipe

    To make a dry rub for pork ribs, simply mix together paprika, ancho chile powder, cumin, coriander, cayenne, salt, pepper and brown sugar (exact measurements below).  This particular blend of spices enhances the sweetness of the pork ribs while providing some savory balance.  Cayenne pepper adds a spark of heat while ancho chile powder lends some complex sweetness.  Don’t use smoked paprika here, because the ribs will pick up plenty of smoky flavor from the grill.

    I would recommend that you dry rub the ribs shortly before cooking them on the grill.  If you dry rub them too far in advance (like hours in advance), you’ll essentially be curing the ribs, and they’ll lose a good amount of moisture.

    The last thing I’ll mention is that you want to finish these ribs on the grill with a barbecue sauce  baste.  There are plenty of delicious prepared barbecue sauces at the grocery store, but feel free to use homemade if that’s your thing.  I basted these ribs with a sweeter barbecue sauce, because I thought it would be a nice balance to the smokiness of the grill and the savory notes of the dry rub.  Just be sure to keep some extra sauce on the side for serving!

    Ingredients  1x2x3x

    For the dry rub:

    • 2 tablespoons paprika
    • 1 tablespoon kosher salt
    • 1 tablespoon freshly ground black pepper
    • 1 tablespoon brown sugar
    • 1 tablespoons ancho chile powder (or any chile powder you have on hand other)
    • 2 teaspoons ground cumin
    • 1 1/2 teaspoons ground coriander
    • 3/4 teaspoon cayenne pepper

    For the ribs:

    • 2 – 3 racks pork baby back ribs (about 2 1/2 pounds each*)
    • A couple handfuls of hickory wood chips, soaked for at least 30 minutes (optional)
    • 1 cup prepared barbecue sauce

    Instructions 

    • Place all of the dry rub ingredients in a small bowl, mixing to combine. Using a sharp knife, remove any silverskin on the back of each rack of ribs. I like to use a knife to release an edge, and then pull up it off with a paper towel. Coat each rack of pork ribs evenly with the rub, then wrap tightly with 2 to 3 layers of foil. If you’ve got standard sized aluminum foil, you’ll probably need 3 layers. As you are wrapping, be careful not to pierce the foil with the ribs.

    • Preheat a charcoal or gas grill to medium heat. Cook ribs covered over direct heat for 1 hour, turning twice to ensure even cooking. You’re looking to maintain between 350°F – 400°F within the covered grill.

    • Take the ribs off the heat and let rest for 10 minutes. Remove the foil and discard any liquids. Meanwhile drain the hickory chips (if using) and scatter over the coals or add to the smoker box of a gas grill. Once smoking, return the ribs to the grill bone side down and using a brush, baste the top of the ribs with barbecue sauce. Cook covered for 10 – 12 minutes until glaze is charred in spots. You’ll want to flip the ribs and baste twice during this time period.

    • Let rest for 5 minutes before serving. Be sure to serve some extra barbecue sauce on the side!

    *You’ll have enough dry rub for 3 racks of pork baby back ribs. Personally, I could only fit 2 racks of ribs on my grill (with room to breathe), but if your grill can accommodate 3, then go for it!
