- 3-4 turkey thighs (2 lbs total approx)
- 2 cups broth chicken or turkey is fine
Stuffing
- 1 box stuffing mix
- 1 cup water or broth
- ½ cup onion chopped
- ½ cup celery chopped
- 4 Tbsp butter divided (2 for stuffing, 2 for saute)
Gravy
- 2-3 Tbsp cornstarch
- 2-3 Tbsp water for your slurry
Start by preparing your stuffing first. You can prepare it just like it says on the box, but reduce your liquid by ½ cup when cooking in the pressure cooker.
Use a 7x3 inch pan (or stacker pan) and dump the dry stuffing mix into the bottom. Add a couple tablespoons of butter right on top.
Next, set your pot to Saute and wait for the pot to say Hot. Then it's ready to cook. Add your butter and quickly add your onions and celery. Saute until soft.
When veggies are done, scoop them out and add them right on top of your stuffing. Then pour in your broth and set this pan aside.
Return the stainless steel inner pot to your pressure cooker. Deglaze the pot with 2 cups broth and add your turkey thighs.
Place a tall trivet over the turkey thighs. On top of the trivet add your pot-in-pot stuffing pan and leave it uncovered.
Pressure Cook for 8 min and 10 min NPR. If your turkey thighs are really large, go ahead and cook for 10 min with a 10 NPR. Always check your meat temp with a thermometer. The temp should be 165 or above.
Carefully remove your pot-in-pot stuffing dish and set aside to cool.
Remove trivet and use a tongs to take out your turkey thighs.
Gravy (optional)
If you are making gravy you can press Cancel and then select Saute. Make your cornstarch slurry and add to pot using a whisk. Bring your liquid to a boil and stir until it thickens. Season your gravy with salt and pepper if needed.

Stacker pans are great. You don’t have to use them both though. You can use just one if that’s all you need. I made turkey thighs in the bottom of the pot and stuffing (pot in pot) on top. Worked out perfectly!
